Ailsa Bay single malt is an unusual revolutionary creation, the distillery displays precisely the PPM (Phenol Parts per Million) as well as the SPPM (Sweet Parts Per Million) of the liquid in the bottle.The Ailsa Bay is the only whisky to go under a micro maturation process – a maturation in Hudson baby bourbon casks that can hold between 25-100 litres only. Following that the spirit spends several years in virgin, first-fill and refill American oak casks.A new age single malt sweet and smoky.
Nose: Fresh wood smoke with notes of smouldering damp heather and an extinguished bonfire. Following the smoke is a wave of oaky sweetness and vanilla oak, candied orange peel.
Taste: Beautifully balanced peat and rich vanilla oakiness, this second batch has maintained the same intriguing flavour meandering between smoke, fruit and creamy toffee, this extra maturation period has developed deeper toasty oak notes with every sip.
Finish: Fresh; sugared lime and oak give way to herbal nuances.
